Born in Berlin but raised in southern Germany Matthias Diether gained his professional knowledge with the great chefs of that country: veteran Lothar Eiermann (Schlosshotel Friedrichsruhe); the German kitchen stars Harald Wohlfahrt (Traube Tonbach) and Dieter Müller (Schlosshotel Lerbach), and the shooting star Sven Elverfeld (Aqua Wolfsburg)…
Diether tracked out into the world: he managed the gourmet kitchens in Dubai for the Ritz Carlton, the Emirates Palace and the Shangri-La and led the kitchen of Turnberry Resort in Ireland before moving to the pulsating German capital Berlin where he found his signature restaurant in 2010. In the First Floor, he was able to perfect his artistic, elegant cooking style that characterizes him today.
Delicate aromas, the best produce, sometimes opulent, sometimes subtle and tenderly staged… made him in Berlin the culinary favorite of the city.
Since 2009, Diether earned eight times a Michelin star for the restaurants he led. And today he is on the way to establish his culinary home in Estonia … he has fallen in love with our naturalness and our passion for the unique regional cuisine in Estonia, on Muhu Island.
‘My credo is to give the fullest together with my team – each single day – to surprise our guests with sophisticated culinary creations that are inspiring and a joy to eat. I love using only authentic, fresh products of high quality and to try out different textures and at times unexpected combinations. All that we prepare should speak for itself, for me this means that produce is the true star on the plate without much need for knickknack. My creations are clear, tasty and presented in a creative and contemporary way. The clean definition of the Nordic Islands’ Cuisine together with having our own kitchen garden; our own forager and not to forget the farmers, fishermen, hunters and artisans directly in front of our door so to speak – is a real dream for every passionate chef.’
